Toss the carrots in a little oil

Toss the Parisian carrots in a little oil and season with salt and pepper. Add the potatoes and spread across a Pyrex casserole dish or other openable container. Roast for 35 minutes. Remove from oven and allow to rest. On a wax paper lined cookie sheet, you can arrange the slices of brisket placing in the oven on the rack above the corned beef for 10 minutes. Remove once reheated.

Prepare Kale

Kale can be prepared to your liking by sautéing with garlic and butter, steaming or blanching quickly for 3 minutes in hot salted water and then seasoned as desired.

Alternatively, you can go traditional and stew one half head of cabbage in pickling spice, salt, garlic, and water spiked with apple cider vinegar on the stove top over medium high heat until the cabbage becomes tender.

Arrange the potatoes and carrots

Arrange the potatoes and Parisian carrots on your platter, then transfer brisket to platter on top of vegetables, and surround with kale or cabbage. Enjoy.
