Prep the Limes

Prep the Limes. Cut all three limes in half. Set one aside. The other two limes you will use to garnish your veggie bowl at the end of the recipe. Squeeze the limes you have cut into a small bowl and set aside as well. The lime you set aside that hasn’t been squeezed may be used for esthetics placement or more lime juice if wanted.

In a sauté pan

In a sauté pan, put 4 Tbsp of your oil of your choice and let the oil warm up. Throw in the mushrooms and cook until tender. Combine all ingredients except mayo, cotija, cilantro and limes to the sauté pan. Toss the mixture in the pan until hot.

Add the mayo

Add the mayo and fold it in to make it creamy and warm. Throw on the cotija cheese.

Add the cotija cheese

Spoon into your bowl, garnish with cilantro and pour your lime juice and more cotija if you want and top with sliced avocado, tortilla strips and cucumber slices.

Garnish your plate with the left over lime if not used
